Nectarine Chutney

Serves: 3 cups
Ingredients
  • 2 teaspoons oil
  • 1 teaspoon yellow mustard seeds
  • 1 small white onion, diced
  • ⅔ cup sugar
  • ⅓ cup white wine vinegar
  • ¼ teaspoon crushed red pepper flakes
  • 4 firm, but ripe nectarines (about 1½ lbs total), pitted, but into 1-inch pieces
  • ½ teaspoon salt
Instructions
  1. Heat oil in a large saucepan over medium heat.
  2. Add mustard sheets and saute until they begin to pop, about 30 seconds.
  3. Add onion and saute until tender and translucent, about 4 minutes.
  4. Stir in sugar, vinegar, and pepper flakes. Simmer until the sugar dissolves.
  5. Add nectarines and cook until nectarines are tender, stirring occasionally for about 10 minutes). They should still hold their shape – syrup will slightly thicken. Stir in salt.
