Snickerdoodle Bars

Ingredients
  • 2 cups flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 2 cups brown sugar, packed
  • ⅔ cup butter
  • 2 eggs
  • 2 teaspoons vanilla
  • ¼ cup sugar
  • 2 teaspoons cinnamon
  • 1 tablespoon butter, melted
Instructions
  1. Pre-heat oven 350 degrees. Line a 9×9 baking dish with parchment paper or with foil. If using foil, lightly grease with non-stick spray.
  2. In a medium bowl, stir together flour, 2 teaspoons cinnamon, baking powder, and baking soda.
  3. In a medium saucepan, cook and stir brown sugar and ⅔ cup butter over medium heat until butter is melted and mixture is smooth. Remove from heat, cool slightly.
  4. In a separate bowl, beat 2 eggs and add vanilla. Slowly pour into brown sugar mixture – constantly stirring while pouring. Stir in flour mixture until combined.
  5. Pour batter into the prepared baking pan, spreading evenly. Bake for 25 to 30 minutes or until toothpick comes out clean. Cool slightly in pan on wire rack.
  6. In a small bowl, stir together remaining cinnamon and sugar. Brush warm bars with 1 tablespoon of melted butter and sprinkle with cinnamon-sugar; cool completely.
  7. Pull bars out of pan by lifting up edges of parchment paper / foil. Cut into bars.
