Corn Bread Muffins

Ingredients
  • 1¾ cup flour
  • ¾ cup yellow corn meal
  • ¼ cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • ¼ cup vegetable oil
  • 1 egg, beaten
Instructions
  1. Pre-heat oven to 400 degrees.
  2. Combine all dry ingredients.
  3. Stir in milk, oil, and egg, mixing just until dry ingredients are moistened.
  4. Pour batter into 12 greased or paper lined muffin cups.
  5. Bake 15 to 20 minutes until golden brown.
  6. Serve warm.
