Homemade Cheese Crackers

Ingredients
  • 1½ cups finely grated sharp cheddar cheese (6 oz)
  • 4 tablespoons unsalted butter
  • 1 teaspoon salt, plus ½ teaspoon
  • ½ teaspoon white pepper
  • ½ cup plus 2 tablespoons all-purpose flour
  • 2 tablespoons cornstarch
  • 2-3 tablespoons water
Instructions
  1. Adjust oven racks to upper-middle and lower middle positions.
  2. Pre-heat oven to 375 degrees.
  3. Using a stand mixer, combine cheese, butter, 1 teaspoon of salt, and pepper until it starts to stick to the sides of the bowl: 30 seconds to a minute.
  4. Add flour and cornstarch, mix until combined, about 1 minute.
  5. Add 2 tablespoons of water and mix briefly until dough ball forms. Add another tablespoon of water, if needed.
  6. Transfer dough to floured counter and flatten into a disk.
  7. Wrap in plastic and refrigerate until chilled, about 30 minutes.
  8. Line 2 rimmed baking sheets with parchment paper.
  9. Unwrap the dough and place on a floured surface. Roll to 1/16 inch thickness.
  10. Cut into 1-inch squares using a pastry cutter with a beveled-edge.
  11. Using the blunt-end of a skewer, poke a hole in the center of each square.
  12. Transfer to baking sheets. Sprinkle with remaining salt.
  13. Place baking dish on lower-middle position and bake for 5-6 minutes.
  14. Then, rotate baking pan to the upper-middle position and bake for another 5-6 minutes until light golden around the edges.
  15. Let cool on baking sheets.
  16. Store in an airtight container at room temperature for up to 3 days.
