Skillet Honey Cornbread

Ingredients
  • 2 Tablespoons butter
  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1 cup milk
  • 2 large eggs
  • ⅓ cup honey
  • ⅓ cup canola, vegetable, or corn oil
Instructions
  1. Pre-heat oven to 400 degrees.
  2. Place butter into a 9-inch cast iron pan. Place pan in oven while pre-heating to allow butter to melt.
  3. In a mixing bowl, whisk together milk, eggs, honey, and oil.
  4. Add baking powder, salt, and corn meal to wet ingredients.
  5. Slowly whisk in flour and mix just until combined.
  6. Once butter is melted, swirl butter in pan to coat the sides and bottom of the skillet.
  7. Pour batter into skillet. Bake in oven 22-24 minutes or until golden brown.
Notes
Serve with butter and extra honey!
