Pumpkin Overnight Oats

Ingredients
  • ½ cup rolled oats (not quick cooking)
  • ½ cup milk
  • ⅓ cup Greek Yogurt (I used 6% oz container of Fage Total 0%)
  • 3-4 TBSP canned pure pumpkin
  • 1 tsp. vanilla extract
  • ½ tsp. cinnamon
  • ¼ tsp. ginger
  • ⅛ tsp. nutmeg
  • 1 TBSP honey or maple syrup
  • (Optional: Chopped pecans, almonds, diced apple, banana)
Instructions
  1. In a jar, dump all ingredients and stir.
  2. Place in refrigerator overnight.
  3. In the morning, grab a spoon and you are ready to eat. You can either eat cold or warm up in microwave.
  4. Top with additional granola or pecans for an added crunch!
