One Sheet Pan Pork Chops

Ingredients
  • 2 - 4 boneless pork chops (roughly 1 inch thickness)
  • 2 cups, potatoes chopped (I used baby potatoes)
  • 4 cups, vegetables such as broccoli, cauliflower, carrots, tomatoes, zucchini, squash
  • 1 lemon, sliced
  • salt / pepper
  • Package of Shake and Bake seasoning
Instructions
  1. Pre-heat oven to 350 degrees.
  2. Line half sheet pan with foil and drizzle with olive oil.
  3. Toss pork chops in Shake and Bake seasoning mix. Place seasoned pork chops in center of pan.
  4. Place potatoes and any veggies around the pork chops and drizzle with additional olive oil. Toss veggies/potatoes. Season with salt / pepper.
  5. Cut up lemon and place over over vegetables.
  6. Roast in oven for 30 minutes until pork chop is cooked thru and vegetables are roasted and potatoes are cooked thru. You may want to toss vegetables about halfway thru cooking time.
  7. After you pull tray out of oven, let the pork chops rest for at least 5 minutes before serving.
