Cranberry Banana Bread with Cinnamon Sugar Topping

Ingredients
  • ¾ cup butter, softened
  • ⅓ c. milk
  • 2 cup sugar
  • 1 cup applesauce
  • 4 ripe bananas
  • 4 cup flour
  • 1 TBSP + ½ tsp baking powder
  • 1 tsp baking soda
  • 2 TBSP cinnamon
  • ½ tsp kosher salt
  • 1½ cups Cape Cod Select® Frozen Cranberries
  • Cinnamon Sugar Topping: ½ cup sugar + 1 tsp cinnamon
Instructions
  1. Preheat oven to 350 degrees.
  2. Grease 2 loaf pans.
  3. To make crumb topping, combine ½ cup sugar and 1 tsp cinnamon in a small bowl and set aside.
  4. In a large mixing bowl, combine butter, milk, sugar, bananas, and applesauce. I used a potato masher to mix and used to mix when combining with flour mixture.
  5. Add cinnamon, salt, baking soda, and baking powder.
  6. Slowly add flour in batches and mix with potato masher and/or wooden spoon.
  7. Just before mixture is completely blended, stir in frozen cranberries. Mix just until blended.
  8. Split batter into 2 greased loaf pans.
  9. Sprinkle cinnamon sugar topping evenly over the tops of both loaves.
  10. Bake for 55 min - 1 hour until toothpick comes out clean.
  11. Remove from oven and cool in pan for 10 minutes.
  12. Remove from pans and cool completely on cooling racks.
