Better Than Your Mom's Meatloaf

Ingredients
  • 2 tsp olive oil
  • 1 medium onion, finely chopped
  • 1 lb ground beef (85-90% fat)
  • ½ lb ground turkey breast
  • ⅔ cup quick-cooking rolled oats (not instant)
  • 2 large eggs
  • 2 TBSP chopped parsley
  • 1 TBSP Dijon-style mustard
  • 1 TBSP Lucky Foods Gochujang
  • 3 garlic cloves, minced
  • 1½ TBSP soy sauce
  • 1 TBSP sesame seeds
  • ½ tsp seasoned salt
  • ½ tsp fresh ground pepper
  • ⅓ cup Lucky Foods Kalbi Sauce
Instructions
  1. Preheat oven to 350 degrees F. Line a rimmed baking sheet with foil and spray with nonstick spray.
  2. Or you can use a meatloaf/loaf pan.
  3. Heat oil in a large, nonstick skillet; add the onion and saute until soft, about 8-10 minutes. Set aside to cool slightly.
  4. Meanwhile, combine the beef, turkey, rolled oats, eggs, parsley, mustard, soy sauce, gochujang, sesame seeds, garlic, seasoned salt, and pepper in a large bowl. Stir in onions.
  5. Let stand for 10 minutes.
  6. Shape mixture into two 6-inch loaves and place onto baking sheet. Or you can shape into one larger loaf in meatloaf/loaf pan.
  7. Brush Kalbi Sauce on top of loaves.
  8. Bake until thermometer inserted into the center of a loaf reaches 160 degrees F, about 35 minutes. If using meatloaf pan and making into one larger loaf, will cook roughly 50-55 minutes.
  9. Let stand 10 minutes before slicing.
  10. Serve with additional Kalbi Sauce.
