A perfect and refreshing Summer Salad

Ingredients
  • 2 cups fresh cut pineapple
  • 1 (8 oz) package Gopi Paneer Cheese
  • 2 TBSP oil
  • 1 medium cucumber, quarter sliced/diced
  • ⅓ cup tomatoes, diced
  • 1 juice of a lime
  • ⅓ cup cilantro, chopped
  • salt/pepper to taste
  • Pinch of Cayenne optional
Instructions
  1. In a medium saucepan, heat 2 TBSP oil over medium heat.
  2. Cut up Gopi Paneer Cheese into cubes.
  3. Once pan is heated, lay each of the cubes on the oil.
  4. Cook for a few minutes until one side of cheese is golden brown. Then, flip to cook opposite side of cheese cube. Once completely brown on opposite sides, remove from pan.
  5. In a medium bowl, mix all remaining together.
  6. Add cooked Gopi Paneer Cheese. Toss to combine and enjoy!
