Beef & Pierogi Stew

Beef & Pierogi Stew - perfect for a Fall/Winter Day.

First, I hope everyone is having a great start to 2015!  I am so excited for this New Year.  I'm not one for "resolutions",  I feel like those never get accomplished.  Over the last few years, I have been creating a "Bucket List" of things that I would like to see/do for each given year.

Apple Carrot Zucchini Bread

Apple Carrot Zucchini Bread -- Perfect recipe for Fall! Super easy and delicious!!

In my Farm Fresh to You box this past week I received apples, zucchini, and carrots.  I originally had other plans for these items, but decided to try out a new recipe.  I'm so glad I did, because this bread was super delicious and moist!  You might even be able to fool a few people who typically don't care for zucchini or carrots. Plus, I was able to use some more of the macadamia nuts that I purchased while in Hawaii!  Mmm Mmm Good! Some Fun Facts Regarding Zucchini: Zucchinis contain

Dutch Apple Pancake

I made my first Dutch Pancake back in 8th grade Home Ec class.  I had some apples on hand and thought this would be a perfect mash-up.  Usually Sunday's are my husband's day off work.  I typically will make a breakfast this day instead of the usual cereal, oatmeal, or toast that we have during the week.  We absolutely loved this apple pancake - FYI -- it's definitely a sweet breakfast! Pumpkin Chili

I love Pumpkin! So far, I have made Pumpkin pie, Pumpkin-Banana Muffins, Apple-Bacon Pumpkin Soup...and I thought how about some Pumpkin Chili!  I'm a big fan of chili, especially on a Fall Sunday afternoon.  This was a perfect meal to sit back and enjoy while watching NFL.  Don't forget to make some corn bread muffins or biscuits to enjoy with it! Apple-Bacon Pumpkin Soup

Apple-Bacon Pumpkin Soup -

There are so many reasons I love the Fall season.  Not only because of the weather and all the leaves changing colors, but also because of all the yummy food.  Apple cider, Pumpkin Pie, Pumpkin Roll.....the list could go on. I've never had Pumpkin Soup before, but thought I would take the recipe one step further by adding apple and bacon.  Man, oh man, the apple and bacon is just the "Dash of Sass" that made this recipe over the top and delicious.  I added extra bacon/apple to my bowl!
