Ingredients
  • Apples Portion:
  • 3 TBSP butter
  • ¾ cup brown sugar, lightly packed, I used Florida Crystals® Organic Brown Raw Cane Sugar
  • ½ tsp cinnamon
  • 1 tsp vanilla
  • ¼ tsp kosher salt
  • 2 large apples - I used Honey Crisp, peeled, cored, and sliced ½ inch thick
  • Cake:
  • 1 cup flour
  • ¾ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ½ stick of butter (1/4 cup)
  • ½ cup sugar, I used Florida Crystals® Organic Raw Cane Sugar
  • 2 eggs
  • 1 tsp vanilla
  • 4 oz. cream cheese, room temp
Instructions
  1. Pre-heat oven to 350 degrees. Grease a nonstick (9 inch) round cake pan or you can make everything in a cast iron skillet if you have.
  2. In pan, on low heat, melt 3 TBSP butter. Whisk in brown sugar, cinnamon, vanilla, and salt - about 1 to 2 minutes.
  3. Pour sauce into prepared pan or remove cast iron from heat while you assemble the apples.
  4. Assemble apple slices on top of brown sugar mixture.
  5. In a medium bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  6. In another bowl, beat butter and sugar until creamy. Add eggs one at a time.
  7. Add vanilla
  8. Add ½ of the dry ingredients to the wet ingredients and mix just until combined. Add cream cheese and mix until full incorporated.
  9. Add remaining dry ingredients. Stir just until combined.
  10. Pour batter evenly over apples. Spray spatula with non-stick spray to help spread the dough evenly over the apples.
  11. Bake 30 minutes or until cake is golden and toothpick comes out clean.
  12. Let cool for 10 minutes before inverting warm cake onto a serving plate.
  13. Before serving you can make a quick powdered sugar glaze using Florida Crystals® Organic Powdered Raw Cane Sugar and a few TBSP of milk.
