Apple Upside-Down Cake

- Apples Portion:
- 3 TBSP butter
- ¾ cup brown sugar, lightly packed, I used Florida Crystals® Organic Brown Raw Cane Sugar
- ½ tsp cinnamon
- 1 tsp vanilla
- ¼ tsp kosher salt
- 2 large apples - I used Honey Crisp, peeled, cored, and sliced ½ inch thick
- Cake:
- 1 cup flour
- ¾ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 1 tsp cinnamon
- ¼ tsp nutmeg
- ½ stick of butter (1/4 cup)
- ½ cup sugar, I used Florida Crystals® Organic Raw Cane Sugar
- 2 eggs
- 1 tsp vanilla
- 4 oz. cream cheese, room temp
- Pre-heat oven to 350 degrees. Grease a nonstick (9 inch) round cake pan or you can make everything in a cast iron skillet if you have.
- In pan, on low heat, melt 3 TBSP butter. Whisk in brown sugar, cinnamon, vanilla, and salt - about 1 to 2 minutes.
- Pour sauce into prepared pan or remove cast iron from heat while you assemble the apples.
- Assemble apple slices on top of brown sugar mixture.
- In a medium bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, beat butter and sugar until creamy. Add eggs one at a time.
- Add vanilla
- Add ½ of the dry ingredients to the wet ingredients and mix just until combined. Add cream cheese and mix until full incorporated.
- Add remaining dry ingredients. Stir just until combined.
- Pour batter evenly over apples. Spray spatula with non-stick spray to help spread the dough evenly over the apples.
- Bake 30 minutes or until cake is golden and toothpick comes out clean.
- Let cool for 10 minutes before inverting warm cake onto a serving plate.
- Before serving you can make a quick powdered sugar glaze using Florida Crystals® Organic Powdered Raw Cane Sugar and a few TBSP of milk.
