Hawaiian BBQ Cups

Ingredients
  • 2-3 large, boneless chicken breast, cooked and shredded, about 2 cups
  • ½ cup pineapple tidbits, drained
  • ⅓ cup your favorite BBQ sauce
  • ¼ cup finely diced onion
  • 1 cup shredded cheddar cheese
  • 24 Twin Dragon Won Ton Wrappers
  • Garnish: Extra BBQ, Sour Cream, cilantro, and/or scallions
Instructions
  1. Pre-heat oven at 375 degrees.
  2. Mix shredded chicken, pineapple, BBQ sauce, and onion in a medium bowl until well coated.
  3. Lightly spray 12 cups of muffin tin with non-stick spray and press one wonton wrapper into each muffin cup.
  4. Spoon half of the chicken mixture evenly into the 12 cups, and top with half of the cheese.
  5. Press another wonton wrapper on top of each cheese layer. Lightly press to avoid any air bubbles.
  6. Note: Try to rotate the position of the wrapper so it isn't exactly the same way the bottom one is.
  7. Lightly spray edges of won ton wrapper points.
  8. Repeat the chicken mixture and then top with cheese. The cups will be very full.
  9. Bake 18-20 minutes. Let the cups cool 5-10 minutes before popping them out to serve. This will help keep their shape when serving.
