Thai Chicken Pizza

- 1 pizza dough, any brand
- ½ cup Serious Foodie Vietnamese Sweet Chili Hot Sauce
- 2 cups shredded mozzarella cheese
- ½ red bell pepper, thinly sliced
- ⅓ cup pineapple tidbits
- 2 TBSP oil
- 2-3 TBSP Serious Foodie Filipino Grill Spice Rub
- ½ lb chicken breast
- 3 scallions, sliced thin
- ¼ cup peanuts, chopped
- ⅛ cup cilantro, chopped
- ½ cup carrots, julienned
- 1- 2 TBSP Serious Foodie Indonesian Sambal Hot Sauce (optional)
- Preheat oven to 425 degrees.
- On a plate, rub Serious Foodie Filipino Grill Spice Rub all over Chicken breasts.
- Heat oil over medium high heat. Cook chicken breasts for several minutes each side until fully cooked.
- Remove cooked chicken from pan and let cool for a few minutes on another plate.
- After a few minutes, slice up chicken.
- Take pizza dough and shape out dough with your hands into desired shape onto a parchment lined baking sheet.
- Spread Serious Foodie Vietnamese Sweet Chili Hot Sauce on top of the pizza dough, as the pizza sauce.
- Sprinkle mozzarella cheese on top of sauce.
- Sprinkle the following toppings across the top of pizza: sliced cooked chicken, red bell pepper, carrots, and pineapple.
- Bake for 15-17 until crust starting to brown and cheese fully melted.
- Once you remove pizza from oven, top with scallions, cilantro and chopped peanuts.
- (Optional) drizzle with Sambal Hot Sauce to add some additional heat!
