Vanilla Waffle Cookies

Serves: 3 dozen
Ingredients
  • ½ cup (1 stick) butter, melted
  • 2 eggs, beaten
  • ½ cup sugar
  • ½ cup brown sugar, packed
  • 1 teaspoon vanilla
  • 2 cups flour
Instructions
  1. Mix together butter, eggs, and sugars; add vanilla.
  2. Slowly mix in flour just until combined.
  3. Drop teaspoonfuls (I used my small cookie scoop) onto an ungreased waffle iron.
  4. After one minute, check on them.
  5. Cookies are done when they have a medium golden color in the center and light golden color on edges.
