I love Fall. However, in Ohio we often don’t get a full season of it to truly enjoy it. We usually go straight from summer to winter. This past weekend we drove out of town for my cousin’s daughters first birthday celebration. The drive to Maryland/NOVA was absolutely beautiful – the leaves on the trees were all different colors. It almost looked like a painting.
I also love all the flavors/foods of Fall. Pumpkin everything, apple cider, apple cobbler, oh my!
This created the inspiration to try Pumpkin Spice Overnight Oats.
What exactly is Overnight Oats? Basically it’s raw rolled oats (not quick cooking) that are soaked overnight to absorb whatever liquid you put with them. Put in the fridge overnight and in the morning, you have a delicious (and healthy) breakfast ready-to-go.
The thing that I LOVE the most is it’s so easy to create and prep in advance. The two previous Overnight Oats recipes I created were: Peanut Butter & Banana Overnight Oats and Strawberry Banana Overnight Oats.
Basically you can start with your Base Ingredients: Rolled Oats/Greek Yogurt/Milk (see quantities within recipe below) — then add whatever other flavors/ingredients you desire (Endless Possibilities)!
I topped my oats with a new grain-free granola that I came across while shopping at my local grocery store Heinen’s. It was featured on an endcap and they had several different flavors. The brand was Purely Elizabeth (not sponsored, just absolutely LOVED the product.) The Cinnamon Peanut Butter flavor sounded really good and thought it would be a perfect combination for the oats. Not only did it pair well with the oats, I literally couldn’t stop munching on this granola throughout the week. If you haven’t tried, I highly recommend. So much flavor and it’s lightly sweetened with coconut sugar. It’s Grain-Free, Certified Gluten-Free, Non-GMO, Vegan + Contains Organic Ingredients. Also, has 5g Protein per serving.
ENJOY!
- ½ cup rolled oats (not quick cooking)
- ½ cup milk
- ⅓ cup Greek Yogurt (I used 6% oz container of Fage Total 0%)
- 3-4 TBSP canned pure pumpkin
- 1 tsp. vanilla extract
- ½ tsp. cinnamon
- ¼ tsp. ginger
- ⅛ tsp. nutmeg
- 1 TBSP honey or maple syrup
- (Optional: Chopped pecans, almonds, diced apple, banana)
- In a jar, dump all ingredients and stir.
- Place in refrigerator overnight.
- In the morning, grab a spoon and you are ready to eat. You can either eat cold or warm up in microwave.
- Top with additional granola or pecans for an added crunch!
