Airfryer Buffalo Chicken Egg Rolls

One of my favorite appetizers to make when entertaining friends for a get together or even a big game is Buffalo Chicken Dip!  It’s rare that we ever have any leftovers.  However, with the pandemic and not being able to entertain how we used to – we happened to have some leftovers.  (Watch out for Cleveland Browns next season!)

Since I had some leftover Buffalo Chicken Dip, I decided to try out a new spin on the recipe.  Also, decided to see how egg rolls would turn out in the air fryer.   I’ve been obsessed with my air fryer the last few months.

I used Twin Dragon Egg Roll Wrappers.   You can find and purchase Twin Dragon Wrappers at Wal-Mart, Albertsons, Shaw’s, Von’s, Stater Bros, Fred Meyer, QFC, Safeway, Associated Stores, Giant Stores, Stop N’ Shop, Winco, Price Chopper and others.  If they are not in your local store, ask them to carry Twin Dragon Wrapper products.

Ingredients

• 1 cup (leftover) buffalo chicken dip (see link above for original recipe)
• ½ cup shredded cheese (I used Cheddar)
• ⅓ cup finely diced celery
• 8 Twin Dragon Egg Roll Wrappers
• ⅓ cup ranch
• 3 TBSP hot sauce (I used sriracha)
• Non-Stick Spray

Instructions

1. With a corner of an egg roll wrapper facing you, place 2 tablespoons buffalo chicken mixture just below center of wrapper.
2. Sprinkle with 1 TBSP cheddar cheese.
3. Spinkle with diced celery on top.
4. Wet edges of wrapper with water using your fingertip.
5. Fold bottom corner over filling and push slightly back.
6. Fold side corners towards center over filling.
7. Roll up tightly, pressing at the tip to seal.
8. Repeat.
9. Spray egg rolls with non-stick spray on all sides.
10. Place in airfryer at 400' degrees for 10-12 minutes until wrappers are golden brown.
11. Let slightly cool before serving. Serve with dipping sauce.
12. To make dipping sauce - mix ranch and your favorite hot sauce.
