I was super excited about this challenge, because I absolutely LOVE chips and salsa and Mexican Food in general.

If you didn’t catch my last blog post from last week, check out the Fajita Steak Rolls recipe that I incorporated Sam’s™ Salsa in both the liquid the meat cooked in, as well as within the garnish on top. This was the first recipe I submitted for the contest within the Entrée category!
The second category to submit recipes for was Appetizer. I really wanted to use the Watermelon Jicama Salsa in some fashion since this was a fan favorite with family and friends as a get together we had at Memorial Day. Everyone was hesitant to try based on hearing the words Watermelon & Jicama combined. However, every single person after trying was pleasantly surprised and said that was their favorite flavor out of them all. It’s initially sweet and refreshing from the watermelon, but then you get a nice heat on the back end that balances perfectly.
I have seen in restaurants where they have combined watermelon and feta together in a salad, so I figured why not try that spin but use the salsa to make a Watermelon Jicama Vinaigrette.
This is a perfect, refreshing salad to kick off any dinner celebration. You could even add grilled chicken breast to the salad to dress it up as an Entree as well. In my salad, I used Spring Mix lettuce, watermelon cubes, feta, thinly sliced red onion, and thinly sliced pea pods for some crunch. I absolutely love the sweet heat in this recipe. I highly recommend – I would have never thought of incorporating salsa into a salad dressing prior to this challenge! Let me know what you all think!
- ½ cup Sam’s™ Watermelon Jicama Salsa
- ¼ cup honey
- 1 TBSP apple cider vinegar
- 1½ TBSP Dijon Mustard
- ½ cup olive oil
- Salt/Pepper to taste
- Add all ingredients to a bowl, except olive oil.
- Slowly whisk in olive oil until fully combined.
- Add salt/pepper to taste.
