Lucky Foods were looking for food bloggers to compete in a food blogger recipe challenge. I was honored that I was one of the 30 bloggers chosen for this contest. Each food blogger was sent (3) of their Korean sauces to create a unique appetizer and entrée dish.
We were sent samples of the following:
- Kalbi BBQ Sauce (Vegan / Gluten Free / Non-GMO Certified)
- A staple in Korean cooking and traditionally used for short ribs. Offering a combination of sweet and savory flavors and a zing of ginger. You can use as a marinade to make authentic Korean BBQ at home, or add into a wok for a delicious stir fry sauce.

Kimchi Mayo (Vegan / Gluten Free / Non-GMO Certified)
- A blend of vegan mayonnaise and their Kimchi Hot Sauce. They use gochugaru – the same chili pepper that gives Kimchi its spicy flavor to create this creamy condiment that will be your new go-to on everything from sandwiches to veggie platters.

Gochujang (Vegan / Non-GMO Certifed)
- A staple in ethnic cooking, Gochujang, is a red chili pepper paste made from authentic Korean chili peppers. This paste offers a healthy amount of lingering heat, while adding subtle sweetness and umami flavor from the fermented soybeans. Use in moderation in everything from stews to marinades.

I have never really been a fan of meatloaf until I made this recipe. Everyone in the family immediately gave it two thumbs up and it’s already part of our dinner rotation. It’s really easy to quickly assemble and keep in the fridge until you are ready to put into the oven. Perfect for those nights you don’t want to spend alot of time in the kitchen.
In this particular dish, I used both Lucky Foods Gochujang and Lucky Foods Kalbi BBQ Sauce. This gave the meat so much flavor. I even added additional Kalbi BBQ Sauce to my plate to dip each bite in. Oh so good!
Even better, I have been currently doing WeightWatchers the last few weeks and this dish is Weightwatcher friendly!! I served up with some mashed cauliflower and corn. Simply Delicious.
Leftovers even tasted great the next day! Highly recommend you add this dish in your dinner lineup soon!
- 2 tsp olive oil
- 1 medium onion, finely chopped
- 1 lb ground beef (85-90% fat)
- ½ lb ground turkey breast
- ⅔ cup quick-cooking rolled oats (not instant)
- 2 large eggs
- 2 TBSP chopped parsley
- 1 TBSP Dijon-style mustard
- 1 TBSP Lucky Foods Gochujang
- 3 garlic cloves, minced
- 1½ TBSP soy sauce
- 1 TBSP sesame seeds
- ½ tsp seasoned salt
- ½ tsp fresh ground pepper
- ⅓ cup Lucky Foods Kalbi Sauce
- Preheat oven to 350 degrees F. Line a rimmed baking sheet with foil and spray with nonstick spray.
- Or you can use a meatloaf/loaf pan.
- Heat oil in a large, nonstick skillet; add the onion and saute until soft, about 8-10 minutes. Set aside to cool slightly.
- Meanwhile, combine the beef, turkey, rolled oats, eggs, parsley, mustard, soy sauce, gochujang, sesame seeds, garlic, seasoned salt, and pepper in a large bowl. Stir in onions.
- Let stand for 10 minutes.
- Shape mixture into two 6-inch loaves and place onto baking sheet. Or you can shape into one larger loaf in meatloaf/loaf pan.
- Brush Kalbi Sauce on top of loaves.
- Bake until thermometer inserted into the center of a loaf reaches 160 degrees F, about 35 minutes. If using meatloaf pan and making into one larger loaf, will cook roughly 50-55 minutes.
- Let stand 10 minutes before slicing.
- Serve with additional Kalbi Sauce.
