JSL Foods Inc. was looking for food bloggers to compete in a food blogger recipe challenge. I was honored that I was one of the bloggers chosen for this contest. I have worked with JSL Foods in the past, so I was super excited to make some new dishes for this one. Each food blogger was sent various ramen/stir fry noodles to create a unique recipe in the following categories: Stir fry and/or Breakfast Noodles.
As soon as I heard one of the categories involved breakfast, I immediately knew I wanted to try and attempt creating a breakfast pizza. Yep, you read that correctly – a breakfast pizza using the ramen noodles for the crust. I was so excited to see how it would turn out.
It was super easy to assemble. I cooked my bacon ahead of time and sliced up. Then, I scrambled my eggs in a non-stick pan with a little salt/pepper, so it was really quick to assemble everything together.
Now for the ramen crust. I took the cooked ramen noodles and mixed with 2 eggs, parmesan and some seasoning to help bind and hold the noodles together. You form a pizza shaped crust with the noodles on a non-stick pan and bake for 5 minutes.
Then, you add all your desired toppings – I used a little mayo/hot sauce mixture as my “sauce”. Then topped with shredded cheese, scrambled egg, and bacon. Bake till the cheese is all melted…
You will NOT be disappointed. I was pleasantly surprised how much I enjoyed this. Even the hubby asked for seconds!
If you haven’t tried a pizza crust made from ramen noodles – now is the time! ENJOY!
- 1 package Fortune Yaki-Soba Japanese Style Stir Fry Noodles (all 3 smaller packs), reserve seasoning packets for another use
- 2 large eggs
- 1½ tsp Italian Seasonings
- ¼ tsp black pepper
- ¼ tsp season salt
- ¾ cup shredded parmesan
- 2 cups shredded cheddar jack or mozzarella cheese (I used 1½ cups cheddar jack plus ½ cup parmesan)
- 4 TBSP Mayo
- 2 tsp favorite hot sauce (optional)
- 4 large eggs, scrambled and cooked
- 4 slices bacon, cooked and sliced
- Any additional pizza toppers such as pepper strips, mushrooms, onions, etc
- Preheat oven to 400 degrees.
- Spray 12-inch pizza pan with non-stock cooking spray or using a pizza stone. Set aside.
- Cut slit into each ramen pack and heat in microwave for 1 minute to loosen the noodles.
- Let sit for a few minutes to cool.
- In a large bowl, scramble 2 large eggs, seasonings, and parmesan.
- Empty noodles into bowl with eggs and seasonings, and cheese. Mix all together.
- Spread noodles onto prepared pan in shape of a pizza. Bake for 5 minutes.
- Remove from oven.
- Mix mayo with hot sauce. Spread on top of ramen pizza crust. Should be a very thin coating, you don't need alot.
- Add half of the cheese, then top with cooked scrambled eggs, sliced cooked bacon and any other desired pizza toppings. Top with remaining cheese.
- Bake 12-15 minutes until cheese is melted.
