Big Mountain Foods was looking for food bloggers to compete in a food blogger recipe challenge. I am honored that I was one of the 75 bloggers chosen for this contest. Big Mountain Foods is a woman owned, family operated company that features a variety of fresh, vegan products. Each food blogger was sent samples of the following:
We were to create unique recipes in the following categories: Holiday Entertaining, Holiday Brunch, and Holiday Entrees. Even though I don’t follow a strict vegan or vegetarian diet, I am always open to trying new products to incorporate into our lifestyle.
I immediately knew I wanted to do a spin on my usual quiche recipe using the Superfood Brekkie Links, which are made with ingredients like Canadian Maple Syrup, Apples, Carrots and Spinach.
Even though the items are precooked, I still diced up the Brekkie Links in a saute pan over medium heat with a little olive oil for 2-5 minutes until heated through to 160 degrees. I took the cooked mixture and combined with some eggs/onion/cheese to make a delicious vegetarian quiche that is perfect for any breakfast or brunch. You can easily make this the night before and then warm back up when ready to eat!
- 1 (9-inch) frozen ready-to-bake pie crust (Deep Dish)
- 1 tablespoon butter
- 1 small yellow onion, diced
- 6 large eggs
- 1 cup half-and-half
- ½ teaspoon Italian seasoning
- Sea salt and freshly cracked pepper
- 1 package Big Mountain Foods Superfood Brekkie Links, diced
- 2 cup colby jack cheese, freshly grated
- Optional garnish: chopped chives
- Preheat oven to 375 degrees.
- Place unwrapped frozen pie crust on a baking sheet and bake for 10 minutes. Remove and allow to slightly cool for 10-15 min.
- Add butter to skillet over medium high heat.
- Add diced onion and saute, 3-5 minutes or until soft and translucent. Remove, set aside, and allow to slightly cool.
- Add 1 TBSP olive oil and saute diced Brekkie Links for 2-5 minutes over medium high heat.
- In a large bowl, whisk the eggs until lightly beaten.
- Whisk in the half-and-half, Italian seasoning, and salt and pepper (to taste).
- Gently stir in the diced brekkie links and cheese. Stir in the cooked onion.
- Pour filling into the par-baked pie crust (still on the baking sheet) and bake on your lower oven rack (not the top one) for 35 to 40 minutes, or until set and very slightly jiggly in the center.
- ENJOY!
