Vegetarian Sloppy Joes

Big Mountain Foods was looking for food bloggers to compete in a food blogger recipe challenge.  I am honored that I was one of the 75 bloggers chosen for this contest.   Big Mountain Foods is a woman owned, family operated company that features a variety of fresh, vegan products.  Each food blogger was sent samples of the following:

  • Cauli Crumble Veggie Grounds
  • Big Brat Veggie Links
  • SuperFood Brekkie Links
  • Lion’s Mane Mushroom Crumble
  • Mmm Mighty Mushroom Bites

We were to create unique recipes in the following categories:  Holiday Entertaining, Holiday Brunch, and Holiday Entrees.  Even though I don’t follow a strict vegan or vegetarian diet, I am always open to trying new products to incorporate into our lifestyle.


Vegetarian Sloppy Joes

Cuisine: Dinner
Ingredients
  • 1 package Big Mountain Foods Lion's Mane Mushroom Crumble
  • ¾ cup ketchup
  • ¼ cup brown sugar
  • 3 TBSP dried minced onion -or- 1 small onion, diced
  • 1 TBSP minced garlic
  • ½ - 1 TBSP Sriracha, depending on how spicy you like
  • 1½ TBSP Dijon Mustard, I used Stadium mustard
  • 1 tsp seasoned salt, season to your liking
Instructions
  1. Brown mushroom crumble over medium high heat with 1 TBSP oil.
  2. Add minced onion and garlic.
  3. To the pan, add remaining ingredients and mix well.
  4. Let simmer on medium-low for 5 -10 minutes to let the flavors mingle a bit. ENJOY!!

You can serve on rolls for a typical sloppy joe or I put over a baked potato with a dollop of sour cream!  It was delicious!  Even tasted great as leftovers as well.
