I have to say I was bummed to not host a big get together with friends for the Super Bowl this year. However, that didn’t stop us from still making a yummy snack board to enjoy while watching the game.

I had some leftover shredded chicken and decided to try out a new grab and go snack for the big game. I used Twin Dragon Won Ton Wrappers. You can find and purchase Twin Dragon Wrappers at Wal-Mart, Albertsons, Shaw’s, Von’s, Stater Bros, Fred Meyer, QFC, Safeway, Associated Stores, Giant Stores, Stop N’ Shop, Winco, Price Chopper and others. I love BBQ Chicken Pizza, especially from California Pizza Kitchen. However, there isn’t a CPK near my house. Decided to take some of those favorite flavors of the pizza and coordinate into a handheld snack that is perfect for entertaining guests for a holiday party or even for a big game like the Super Bowl.
These Hawaiian BBQ cups were super easy to assemble in advance and only took about 20 minutes in the oven! You can easily swap in different ingredients based on preferences. Since I had leftover shredded chicken, I mixed in some of my favorite BBQ sauce, a big handful of pineapple tidbits, a little sprinkle of finely diced onion, and shredded cheese. I garnished with cilantro and a little extra of BBQ just prior to serving. However, if you aren’t a cilantro fan, you could easily garnish with green onions, chives, sour cream… the options are endless.
I sprayed my cupcake pan with non-stick spray and pressed one won ton wrapper into the bottom of each spot. I took a heaping tablespoon amount of my filling and pressed on top of won ton. Sprinkled with a pinch of shredded cheese and then pressed another won ton wrapper on top of that mixture. I rotated the position of the second won ton wrapper so the points were in between the points of the first wrapper. Repeated process and baked in oven for 18-20 minutes until won tons were golden brown and mixture heated through.
After it came out of oven, I let it cool in pan for 5-10 minutes before removing from pan and serving.
Garnished with a little extra BBQ sauce and cilantro. You could even drizzle with your favorite hot sauce as well to kick it up a notch. These were a huge hit for the big game.
The best part, they reheat and taste great as leftovers the next day!
- 2-3 large, boneless chicken breast, cooked and shredded, about 2 cups
- ½ cup pineapple tidbits, drained
- ⅓ cup your favorite BBQ sauce
- ¼ cup finely diced onion
- 1 cup shredded cheddar cheese
- 24 Twin Dragon Won Ton Wrappers
- Garnish: Extra BBQ, Sour Cream, cilantro, and/or scallions
- Pre-heat oven at 375 degrees.
- Mix shredded chicken, pineapple, BBQ sauce, and onion in a medium bowl until well coated.
- Lightly spray 12 cups of muffin tin with non-stick spray and press one wonton wrapper into each muffin cup.
- Spoon half of the chicken mixture evenly into the 12 cups, and top with half of the cheese.
- Press another wonton wrapper on top of each cheese layer. Lightly press to avoid any air bubbles.
- Note: Try to rotate the position of the wrapper so it isn't exactly the same way the bottom one is.
- Lightly spray edges of won ton wrapper points.
- Repeat the chicken mixture and then top with cheese. The cups will be very full.
- Bake 18-20 minutes. Let the cups cool 5-10 minutes before popping them out to serve. This will help keep their shape when serving.
