Believe it or not, I have never attempted making a quiche before. Not sure why. Maybe I thought they were really time consuming or hard to make. I’ve enjoyed them at restaurants or even at brunch with friends. I guess I assumed they would be difficult and/or time consuming, but I was completely wrong. Plus, I love how you can make so many different flavor combinations. And, you can make it ahead to enjoy on those mornings where you are short on time and running out the door. With this being my first attempt, I decided to go the basic Ham & Cheese route.

Since I rarely get a chance to make a “fancy” breakfast, I decided to attempt making a quiche one weekend and even invited my parents over. It was a huge hit. Everyone raved about the ham – so much flavor. The ham and cheese combo was a perfect complement.
I can’t wait to try making some different variations, maybe even some that incorporate even more veggies!

Tips:
- The night before, I sauteed diced up Clifty Farm Seasoning Pieces and fully cooked. Time saver!
- Par-Bake your crust in advance! This will prevent your crust from getting soggy.
- I unrolled a pie crust into my pie pan, placed a sheet of parchment paper on top and filled crust with some dried beans/rice. This will help from air bubbles forming.
- For Leftovers:
- Once baked, let the quiche cool for up to 2 hours at room temperature.
- Store quiche rightly covered for up to 3 days in fridge.
- To reheat, cover with foil and bake at 325 degrees until heated through. If you are storing it in the freezer, store in an airtight container, baked quiche will store for up to 2 months.
- 1 (9-inch) frozen ready-to-bake pie crust (Deep Dish)
- 1 tablespoon butter
- 1 small yellow onion, diced
- 6 large eggs
- 1 cup half-and-half
- ½ teaspoon Italian seasoning
- Sea salt and freshly cracked pepper
- 1 and ½ cups diced/cubed Clifty Farm Country Ham Seasoning Pieces, cooked
- 2 cup colby jack cheese, freshly grated
- Optional garnish: chopped chives
- Preheat oven to 375 degrees.
- Place unwrapped frozen pie crust on a baking sheet and bake for 10 minutes. Remove and allow to slightly cool for 10-15 min.
- Add the butter to skillet over medium high heat.
- Add diced onion and saute, 3-5 minutes or until soft and translucent. Remove, set aside, and allow to slightly cool.
- In a large bowl, whisk the eggs until lightly beaten.
- Whisk in the half-and-half, Italian seasoning, and salt and pepper (to taste; be mindful as ham will add saltiness).
- Gently stir in the cubed ham and both cheeses. Stir in the cooked onion.
- Pour filling into the par-baked pie crust (still on the baking sheet) and bake on your lower oven rack (not the top one) for 35 to 40 minutes, or until set and very slightly jiggly in the center.
