Sam’s™ Fresh Salsa was looking for food bloggers to compete in the premier “Sam’s Fresh Salsa Blogger Recipe Challenge.” I was honored that I was one of the 30 bloggers chosen for this contest. I was super excited about this challenge, because I absolutely LOVE chips and salsa and Mexican Food in general.

Prior to deciding what recipes to come up with for the challenge, I served up all three varieties at a Memorial Day gathering with all of our friends. This was the first get together we had since the start of the pandemic, so it was nice having everyone together to enjoy a cookout. Everyone loved each and every flavor.
The one flavor everyone was hesitant on, ended up being the fan favorite all around – Sam’s™ Fresh Watermelon Jicama Salsa.
Challenge Details:
There were two different categories for this challenge – the first was appetizer, which couldn’t just be the usual chips and salsa or nachos. Stay tuned, I’ll be posting that recipe creation in the next few days!!
The second category was Entree. I decided to make Fajita Steak Rolls. Hands down, this recipe was a winner. Super easy to assemble. Throw it in the crockpot and in just a few hours, you will have an amazing dinner that will “WOW” your family and friends. My husband devoured and said I definitely needed to make this again on repeat.

The hardest part of this recipe is the chopping of the vegetables.
And if you have some extra tortilla chips on hand, you can snack a bite (two) of some of the extra vegetable-salsa mixture. SOOO GOOD!
- 1 beef top round or flank steaks, about 1.5 lbs, ¼ inch thick
- 1-2 TBSP olive oil
- ½ medium onion, chopped
- ½ cup chopped green bell pepper
- ½ cup chopped red bell pepper
- 3 TBSP fresh cilantro, chopped
- 3 cloves garlic, minced
- 3 TBSP lime juice (1 whole lime)
- 1 jalepeno pepper, seeded and minced
- 1 can (2 oz) chopped green chiles or ¼ cup Sam's Fresh Salsa Verde
- 1¼ cup Sam's Fresh Cantina Style Salsa
- Rub both sides of meat with olive oil.
- Combine remaining ingredients except Sam's Fresh Cantina Style Salsa in mixing bowl and blend well.
- Measure out about half of the vegetable mixture and set aside for later use.
- Spoon remaining vegetable mixture evenly over steak.
- Roll steak; beginning at narrow end, jelly-roll fashion. Tie with kitchen string.
- Place beef roll into slow cooker.
- Spoon ½ cup of salsa evenly over steak roll.
- Cover and cook on LOW for 8-10 hours or HIGH 4-5 hours.
- Meanwhile, stir ½ cup salsa into reserved vegetable mixture. Cover and refrigerate.
- Spoon remaining ¼ cup salsa over beef roll during the last 15 minutes of cooking.
- Slice steaks into serving portions and accompany with vegetable - salsa mixture.
