DIY Taco Seasoning

Tacos are definitely a regular dinner rotation for us each week.  We usually alternate between chicken or ground beef.  Over the years, I have always bought those seasoning "packets" from the store.  However, have you ever looked at the back of the packet?  There is a lot of sodium and unhealthy preservatives.  Especially lately, I have been trying to eat "clean."  Honestly, I have noticed a big difference over the last few weeks in just how I feel. (And I have even lost a few pounds!)

I'm a huge fan of seafood.  White fish especially, but I also love shrimp - even more so if it's encrusted in coconut! :)  I typically only order fish when we are out at a nice restaurant, unless of course, we are in Hawaii and I'm eating it everyday for dinner!  Boy, do I miss Hawaii....

Super Bowl XLIX Seattle Seahawks vs. New England Patriots It's that time of year!  "Super Bowl Sunday" ~ the annual championship game of the NFL.  It is actually considered (by some) an unofficial American national holiday. The trophy is made by Tiffany & Co and stands almost 22 inches tall. It is worth more than $25,000. It's the 2nd largest day for U.S. food consumption, after Thanksgiving Day! Here is an estimate of what will be consumed this Sunday: 1.25 billion chicken

Strawberry & Banana Overnight Oats

I have been on an Overnight Oats kick ever since I purchased my own Overnight Oats jar.  I love the fact it takes less than 5 minutes to assemble/prep - stir and let your refrigerator do the magic overnight.  In the morning, just grab a spoon and you are ready to eat.  You can eat them cold or warm (I prefer heating up slightly in the microwave to take the chill out.)  In case you missed my previous post for Peanut Butter & Banana Overnight Oats - I describe in detail what Overnight Oats

Did You Know? Cornbread originated in the South and is considered America's food. But did you also know that there are two types of cornbread:  Northern and Southern.  Northern cornbread is sweeter, tends to be a little more cake-like, and generally uses yellow cornmeal.  Southern cornbread is more savory and saltier and typically uses white cornmeal.
