I made my first Dutch Pancake back in 8th grade Home Ec class. I had some apples on hand and thought this would be a perfect mash-up. Usually Sunday's are my husband's day off work. I typically will make a breakfast this day instead of the usual cereal, oatmeal, or toast that we have during the week. We absolutely loved this apple pancake - FYI -- it's definitely a sweet breakfast!

Pumpkin Chili
I love Pumpkin! So far, I have made Pumpkin pie, Pumpkin-Banana Muffins, Apple-Bacon Pumpkin Soup...and I thought how about some Pumpkin Chili! I'm a big fan of chili, especially on a Fall Sunday afternoon. This was a perfect meal to sit back and enjoy while watching NFL. Don't forget to make some corn bread muffins or biscuits to enjoy with it!

I first made this meal a few years ago for a potluck. Everyone loved this dish at the party and couldn't believe how easy it was! I love Bacon. Who doesn't? It's the added touch to so many dishes. However, I hated the mess I would have to clean up when pan frying on the stove. I knew there had to be an easy way to get crisp bacon, that wouldn't curl up, and would be mess-free.
Problem solved! I wish I would have known about this years ago!
