Day 6 – Christmas Cooke Style

I originally tried my first waffle cookie several years ago at my aunts house during the holidays. I thought they were super cute and unique for a cookie platter. So, last year, I was determined to recreate these wonderful cookies. See photo of Vanilla Waffle Cookies towards the bottom of this post. Click on photo for a direct link to that particular recipe.
This year, I wanted to recreate another flavor of these tasty treats. I chose to do Oatmeal – Chocolate Chip. These definitely came out great! Even though between the two kinds, I think Vanilla was my favorite, while my husband preferred these.

- ½ cup butter, melted
- ½ cup plus 2 tablespoons brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla
- ¾ cup flour
- ½ teaspoon baking soda
- ¼ teaspoon cinnamon
- ¼ teaspoon salt
- 1½ cups rolled oats (not instant)
- 1 cup chocolate chips (I used Milk Chocolate)
- Non-Stick Cooking Spray
- Heat waffle iron.
- In a large bowl, whisk butter and brown sugar together until smooth. Whisk in eggs and vanilla. Stir in the flour, baking soda, cinnamon and salt. Stir in the oats and chocolate chips.
- Spray waffle iron with non-stick spray. Use a tablespoon cookie scoop to portion out a cookie onto each waffle square/section. Close the iron and cook until set and beginning to brown – 1½ to 3 minutes, depending on the heat of your waffle iron. Use a thin metal spatula or a fork to transfer the cooked cookies to a wire rack and repeat with the remaining dough, coating the grids with spray as necessary.
Tip #1: When the cookies first come out of waffle iron, they will be soft, almost like a waffle. After cooling on wire rack, the outside will start to harden up like a cookie. The inside will be similar to a soft cookie.
Tip #2: Prior to serving, sprinkle cookies with powdered sugar! Or you can even drizzle icing or melted white chocolate on them. I personally liked mine plain.
Tip #3: The cookies will keep in an airtight container for 3 – 4 days.
Tip #4: You can substitute raisins for chocolate chips. Add a pinch of nutmeg for a more classic oatmeal cookie flavor.
