I am always looking for quick and easy recipes to add to my rotation. Fall weekends are all about spending time with family and of course, relaxation, football, and NASCAR playoffs. You have probably seen in my previous posts I love making all kinds of food/charcuterie boards for everyone to enjoy.
Since I had a package of Hawaiian Rolls and some chicken on hand, I figured I would try a new spin on my favorite Hawaiian Ham & Swiss Sliders. I’ll have to post a recipe for those on the blog in the next few weeks, as they are a popular favorite in our house.

One of my favorite things about Spring / Summer is planting all kinds of produce and herbs in my garden. Basil is one of those herbs I plant each and every year. The first year I planted, I had so much basil that I figured I would try making my own pesto from scratch. I didn’t realize how simple it was to make – and it was so flavorful. A small dollop of pesto could transform and elevate your dishes to the next level whether it’s grilled veggies to eggs to pasta.
A lot of store bought pesto doesn’t pack the same punch as homemade — From the color to texture to flavor. As soon as I opened up the jar of Barilla, I was super impressed with the bright green color of the basil and the immediate smell of the Italian cheeses. Barilla minimizes the handling of ingredients and rapidly prepares their recipe in as little as three hours from start of ingredient preparation to the tightening of the lid.
Pesto should never have an ingredient too dominant or too muted, you should be able to taste each element individually. This pesto had a perfect blend of basil and garlic and had a nice creamy texture from the parmesan cheese and the olive oil gives just the right amount of richness.
TEXTURE
The texture was smooth and creamy, which is perfect to stir into pastas or grains, spreading on sandwiches, mixing into dips, or even using to marinate meat or veggies.
INGREDIENTS
The basil and parmesan are imported from Parma, Italy. I can’t wait to travel and visit Europe one day. My parents actually spent a week touring all different parts of Italy and absolutely loved it.

- 1 package of King's Hawaiian Rolls
- 2 cups shredded, cooked chicken
- 1 cup Shredded Mozzarella Cheese
- ⅓ cup Barilla Creamy Genovese pesto
- 3 TBSP butter, melted
- ½ tsp Garlic Salt
- 1 tsp. dried parsley
- 1 tsp. fresh minced garlic
- Preheat oven to 375 degrees. Spray 13 x 9 pan with cooking spray.
- Cut Hawaiian rolls in half. Place bottom half of rolls into baking dish.
- Spread pesto sauce over bottom half of rolls.
- Spread shredded chicken evenly over top of pesto.
- Sprinkle mozzarella cheese on top of chicken.
- Cover with the tops of the rolls and slightly press down.
- In a small bowl, combine melted butter, garlic, garlic salt, and parsley.
- Brush tops of rolls with melted butter mixture.
- Cover baking dish with foil.
- Bake 15-20 minutes or until cheese is melted.
- Serve warm.
