Chicken Broccoli Alfredo Stuffed Shells

Jan. 21, 2014

Chicken Brocolli Alfredo Stuffed Shells - www.sweetdashofsass.com - Check out and 'LIKE' Sweet Dash of Sass on Facebook for this recipe and many more!

This is one of my husband’s favorite dishes.  I actually made it for him on our 2nd date!  I had made this in advance, so I wouldn’t have a mess in the kitchen when he arrived over my place.  As we were hanging out, he asked me what I was making.  I asked “do you like alfredo”?  And his answer…”I don’t like alfredo, it’s not my favorite.”  I thought to myself, “Crap, he’s going to hate this dish.”  I needed to impress him…I told him not to worry, because the tomato sauce with the alfredo will be great.  If all else fails, I could win him over with the dessert I made (Brownie Bottom Cheesecake).  Outcome:  Bob LOVED it.  I should say DEVOURED it.  I must have won him over that day, because he stuck around and now we are married!  They always say a way to a man’s heart is through his stomach.

Author: Sweet Dash of Sass
Recipe type: Dinner
Serves: 4-6
Ingredients
  • 1 jar (16 oz) alfredo sauce
  • 2 cups cooked chicken, shredded
  • 2 cups cooked broccoli, chopped
  • 1 cup shredded cheddar (or mozzaerlla) cheese
  • ¼ cup shredded parmesan
  • 21 jumbo pasta shells, cooked
  • 1½ - 2 cups spaghetti sauce (optional, but I love the combination of alfredo with tomato sauce!)
  • Salt/Pepper to season (if needed)
Instructions
  1. Pre-heat oven to 350 degrees.
  2. In a large bowl, mix alfredo, chicken, broccoli, and cheeses.
  3. Spoon mixture into pasta shells.
  4. Grease 13 x 9 baking dish with butter or cooking spray.
  5. Evenly spread spaghetti sauce on bottom of baking dish.
  6. Arrange shells in baking pan.
  7. Cover with foil and bake 35 minutes until heated thru.
Notes
Remember that the noodles need to be cooked prior to stuffing. I usually like cooking them 1-2 minutes under what the package says, that way they will fully cook when baking in the oven!

This recipe can easily be altered to your liking. One easy filling addition -- chopped cooked bacon!
3.2.2885

Tip #1:  You can prep all items in advance, right up to the point of baking.  Keep covered in refrigerator until you are ready to bake.

Tip #2:  Own a cookie scoop?  Use your cookie scoop to easily stuff your shells!

Tip #3:  You can freeze this!  Just pre-assemble all the noodles with the filling.  Freeze stuffed noodles without the red sauce.  Then, thaw when ready to bake!

I keep coming back to this recipe for special family dinner nights! It’s my mom’s birthday and this is what I’m making for the family dinner to celebrate her. I saved this recipe years ago and it is always such a hit! For us, I use fresh spinach instead of broccoli and it’s just as great. Thanks for giving us a family favorite!

Hi, this looks great! I’m sorry but I’m a little confused on the sauce. In your pictures you never mixed the sauces and in the final product when the mix is in the shells I don’t see where you mixed in the spaghetti sauce? Is it mixed in and I just can’t tell, bc I feel like I would be able to see it?? Please help. .lol , I’d like to make this asap:)

The red sauce is used as a base on the bottom of the pan to help it not stick. It’s not actually inside the shell mixture. Hope this helps. Any other questions, let me know! Let me know how it turns out when you make it! :)

I love this recipe, and it’s one of the few “different” dishes that my stepson will eat. He is always asking for it. I started experimenting and found that substituting vodka sauce in place of spaghetti sauce is actually very good too! Thanks for adding to our dinner options!

Your not mixing the sauces. The tomato sauce just sits in the bottom of the baking dish and the shells “sit” in it. Just adds a touch of flavoring when you take them out to serve. The tomato sauce is not “mixed” with the Alfredo sauce.

Yes, they should be pre-cooked. Just boil the noodles for 1 minute under the cooking time on package. Then drain, run under cold water – this will stop them from cooking as well as make them easier to handle when you stuff them. Then, when they bake, it will fully be cooked and delicious! Hope this helps! :) Let me know how they turn out once you make!

I have never attempted to make and freeze in advance, because my husband devours all the leftovers. HAHA.. However, you totally could assemble everything just until the point of baking. Then, freeze the stuffed shells. When ready to bake, pull out of freezer and let sit out for 30 minutes to an hour. Then place a little extra sauce on bottom and lay all your shells in baking dish. Cover and bake until shells are fully warmed through. Congrats on the new baby! Are you having a boy/girl?

I was wondering how you cooked the chicken before hand. Did you cook it in a pan on the stove, bake it, dice it up at all, any tips on keeping the chicken from drying out too much??? Thanks

I would recommend either putting chicken breast in your crockpot with a little water/stock for a few hours. Chicken will easily shred. –OR– you can boil water and place chicken in the boiling water and let simmer until chicken is fully cooked. It will be still moist and will be very easy to shred or dice up. Hopefully that helps! :)

I do mine in the crock pot on low for five hours in a can of beer. If I forgot to put it in then I boil it in chicken stock. Both result in easy to shred chicken.

I would recommend spraying non stick spray or greasing the sides of the baking dish. Also, I would make sure sauce is fully covering the base of dish and even rub up against the sides of the noodles. Sometimes, I even do a quick spray of non-stick spray over the noodles before baking. Hopefully that might help for next time! glad everyone still enjoyed!

You boil the shells one minute under or the exact time listed in package. Be sure not to go over. Then bake and will fully cook in oven with the sauce.

You could try spraying the tops of the noodles with nonstick spray or drizzle with olive oil. Also make sure you have enough sauce on bottom of dish covering up bottoms. Or depending on oven, potentially shorten up cooking time a few minutes. Hopefully that helps out. Let me know if any of those options work.

I personally have found that if frozen chicken sits in a slow cooker with liquid all day then it is easier to shred. I decided today to put frozen broccoli and frozen chicken in the slow cooker all day with about 4 cups of water and 2 bullion cubes. Chicken was easier to shred and the broccoli was cooked. Putting it all together now for dinner tomorrow. Love this recipe! So easy!

You can either buy frozen broccoli and put into a medium pot with like an inch or two of water. Boil and cook covered for a few minutes. Then diced up broccoli. Or you can buy the frozen bag that you can microwave /cool directly from bag. Probably the easiest ways instead of going the fresh route.

I already had the micro-steam bags so I used that and chopped it up fine, seemed to work nicely! I have such a large family that I never go my the portions used in directions, I usually just eyeball it and sometimes I end up buying a little more than I need for a recipe, but I was surprised that I had the perfect amount of every item to make two large casserole dishes, packed full! It was a big hit, which is a tough one to do with 8 people in one house, two of them had special dietary restrictions… so to have not even one complaint, that is the best I can ask for!!! Thanks for the recipe!!!

Yes, chicken and broccoli are pre cooked. You can use fresh or frozen broccoli , just needs to be cooked prior. In this dish, I usually just use frozen and cook /steam. Makes it a quick and easy meal to assemble in advance.

Just saw this today… when I happened to already have some leftover chicken… my family can only handle so much chicken, so I enjoyed that this wasn’t a “chicken dish” it was a meal “that had chicken in it”! SO I made it, with a couple of little tweaks – I left some alfredo in the jar and water it down just a little so it wasn’t so thick, then use the cookie/ice cream scoop to spoon it over the shells after I had them in the pan, so they wouldn’t be dry, even smeared it around a little. Then I added a bit extra cheese over the whole thing and it had a real nice ooey-gooey-ness that was out of this world! Plus I made it with some garlic bread, just right to make it a complete success! Thanks for the idea, and on the perfect night, my family (of eight + a guest!!) LOVED every bit! I will definitely be adding your page to my faves and checking out the rest of your recipes <3

Made this tonight for my family. Used the red sauce base in the casserole dish and including an herb dip mix (finely chopped basil, oregano and black pepper) in the Alfredo sauce mixture as well as a sprinkle to top it with.

My wife loved it (she was one that originally found your recipe). My picky 3 year old and my not at all picky 1 year old loved it as well. To be fair my one year old seemed to end up with more of it on her face than her mouth, but she was really making an effort to eat it with her fork, so, I think that counts as her liking it.

I can’t remember if I’ve commented on this before (I thought I did, but don’t see it now, so maybe I didn’t!), but I had to tell you that I made this for the first time a couple months ago, and it’s now on regular rotation in our household. =) I made a few changes (more cheese, more chicken, no marinara), and it’s perfect for us – thanks for the great recipe!

I know I wrote here some time ago complimenting you on your recipe. Well needless, to say I’ve made this dish about 10 times since. Even though I’m making it right now I added some things I wanted to share with you. I cook the chicken and add some spaghetti sauce to it and simmer it down. This adds more flavor. I also filled my shells with all the goodies but i included some cilantro and jalapeños.

Great dish! I have switched the sauces just for a change .. Also have frozen before baking and after .. Takes less time to reheat after

.. Also, instead of jumbo shells, have rolled up spoonfuls of filling in cooked lasagna noodles .. Used ricotta, provolone, Romano .. Basil, oregano, parsley .. Whatever on hand .. Use cumin, chili powder, cilantro, green chilies for southwest flavor .. Experiment!

Since finding this recipe we have this meal in our family once every week or two. My husband loved it so much and bragged about it, seeing as how I just started trying to cook more since the arrival of our new son, but because of the bragging I’ve had to share the recipe with my parents and in-laws as well. I’ve kept the recipe exactly as it reads only started adding mushrooms to the mixture before stuffing the shells. One of the best meals we’ve had and it’s all thanks to you. Thank you so much for sharing!

I know it might sound like a weird combination but trust me – tastes great. You can add just a little at the bottom during baking, then once you eat if you like you can heat up some sauce on the side to add more to your plate.

These are awesome, I’m Italian so we make alot of pasta dishes usually with red sauce. I just found a recipe for “olive gardens” Alfredo sauce it was easy n very good, I used that recipe to fill the shells along with my red sauce on the bottom. The only thing I altered was 1/2 cup cheddar and 1/2 cup mozzarella. I gotta say I’m excited for left overs, thank u for this recipe. The last time I changed traditional stuffed shells I did chicken parm stuffed shells sounds good right, not so much lol!

So glad this recipe has been a hit in your family too! Most of the ingredients are already gluten free. The main thing you would need to use gluten free pasta shells. For the cheese, you would need to buy cheese like Natural Sargento or Tillamook cheese (without the powdered coated stuff that is found on most shredded cheese packages). All classico brand red/white sauces are gluten free that I am aware of.

Plus, you can find them on Amazon too. Tinkyada is one brand that makes larger shells gluten free – CLICK HERE!

I would put chicken in slow cooker or cook chicken in a little boiling – this will make it easier to shred to stuff inside your shells and bake. You you can cook the chicken regular and dice up small to put in mixture for shells. Definitely do not put the chicken raw into the shells as it will take a very long time to cook – which would overcook your shells.

I have not had a chance to calculate out. honestly, it can vary pretty drastically depending on the type of alfredo and cheese you use. You can buy low fat alfredo and cheese to make it more healthly. As long as you eat just a portion size, in moderation, you should be good! However, these shells sure are tasty! :) Let me know if you end making them and how they turn out.

You can either put the chicken in a crock pot for a few hours with 1/2 cup – 1 cup of water. Then cook and shred. Or you can cook in a pan on stove with a little water and do the same thing. If you don’t feel like shredding, you can cook in a pan with a little dap of oil, then cook and Dice into small pieces.

My favorite brand is Preggo. do you use a four cheese sauce or original or one with mushrooms or a one with garlic and herbs? Or is it just a person preference? I made this a little while back with some left over turkey I had frozen. I also did not cook my broccoli, but since my daughter doesn’t like it, I had only cut the buds off, so that part worked out fine. I used the Ragu Garlic & Parmesan Alfredo & I highly recommend it. This dish was delicious! However, I’m making it again tonight & realized that I grabbed a frozen pkg of pork instead of the turkey, so we’ll see how it turns out. I seen someone else had used shrimp & loved it, so I’m keeping my fingers crossed that the pork turns out as good. Thank you for sharing this delicious recipe!

I just made this dish tonight and love it. The only thing I did differently was i omitted the red sauce just because I don’t like red sauce. So to keep the pasta moist I drzzled some olive oil on the bottom of the dish. I would have put a little Alfredo sauce on the bottom but I didn’t have any extra and I didn’t know if it would make it to rich. But the stuffed shells were amazing.
    Great recipe.

Love these. I do make my own Alfredo with a simple cheese beschemel sauce and I do add a littl ricotta cheese. After I mix it all up and stuff the shells, I freeze them for a few hours on cookie sheets. I can then throw them in freezer bags and pull for a single meal for a tumbling teenager or a whole meal for all of us. I prep the same way as the recipe states I just add a little extra oven time. Thanks for this recipe. It’s a fav in my house.

It will freeze easier without the sauce.then when ready to cook you can just thaw and cook and then add sauce to bottom of baking dish at that point.

Third times a charm. I’ve tried 2 different recipes I’ve seen on Facebook and both came out horrible. This recipe was perfect. My whole family liked it. My picky 10-year old ate 5 shells (which is a lot for him).

I made 4 small pans (5 in each) I’m a vegetarian, so I used vegetarian “chicken” for mine and it came out great. I made one regular pan without sauce on the bottom for my son and one with sauce on the bottom for my husband. My husband said he prefers no sauce, but I like the sauce.

I used raw broccoli, chopped finely because my family prefers crunchy broccoli and it came out great. Thank you, this was a hit at our house and we’ll definitely be making it again.

Delicious!! If you are debating to make this with or without the marinara sauce… Definitely use it! I don’t think the dish would be the same without it, the combination is wonderful. Since the shells are cooked al dente, baking them in the marinara really sets off the flavor. I made this for a potluck at work and this was a hit. Yummy!

This is a simple easy recipe, especially for a beginner recent grad of college who has to cook (most of my food was bought/frozen). Recently, I’ve been taking chances at different recipes and for any beginner who knows how to at least cook chicken this is very easy. I made this for my family and the serving size was very accurate to the amount. It is a little messy but its worth it in the end, and what’s cooking without a little mess? Try it out and you won’t regret it. I’m certainly not the best chef but if I can do it than anyone can do it and your taste buds will like you for it!

This is absolutely delicious!! I prefer homemade Alfredo sauce and I will sometimes add bacon into the mix as well. For homemade sauce I use:

A pint of heavy whipping cream, two tablespoons butter, 4 tablespoons cream cheese, and two cups of mozz cheese and a half cup of parm cheese. I also add two cloves of garlic, and some pepper. Heat the whipping cream, butter and cream cheese on low and slowly add the cheese until melted.

The red sauce was a super delish idea, never would of thought of tha if not suggested in this recipe.

Oh my gosh! This is SO good!!! At first I thought the pasta sauce on the bottom was weird, but I thought why not? It’s really good this way. I couldn’t make up my mind whether to use cheddar or mozzarella, so I used 1/2 of each. That’s the only thing I did differently. I used broccoli that I had frozen from our garden. It did take me a while to stuff the shells, but the result is so worth it. My husband loved it! I’ll definitely be making this a lot. Can’t wait to make it for guests.

I’ve been making this recipe for years since I first found it. It’s my son’s favorite!! For my family of three, I prepare it into two baking dishes and get two nights worth out of it. The adults put some red pepper flakes on it right before eating for a little extra kick. I’ve always thought about freezing it but wasn’t sure how the Alfredo would hold, but read tonight in the tips that it’s possible so I’ll definitely be trying!
Thanks for an easy delicious meal!

This is such a great recipe! My whole family loves it. To make it quick and easy, I have also made it as a casserole replacing the shells with egg noodles. Great for pot-lucks!

You can make additional shells and fill them and put into freezer before baking. Then pull out when you want to cook at a later date. You can even make crescent rolls and stuff the filling inside those before baking.

Made this today, skipped the tomato sauce (I’d regret it) and added the diced bacon. Everyone (husband and 2 adult sons, along with me) loved it. Will do again and maybe make 2 trays so the guys can try with the tomato sauce.

Single father of 2 picky daughters…I didn’t grow up having a lot of home cooked meals…my girls survived off mash ups and bagged skillet meals. Recently started taking recipes off Facebook and surprising them for dinner. This recipe left them shocked…they loved it. Now I find myself making it a few times a month! Thanks for sharing it!! Finally cutting it in the kitchen ;)

I’ve been making this recipe for many years since I first found it :) one time I made it into a casserole instead because my store was out of any stuffable shell lol. These are a huge hit with my family! I also always add sautéed mushrooms to it as well.

This recipe has been a go to for my family for several years now. My version has crumbled, bacon, and mushrooms.
For just the three of us, I make the recipe in two dishes and freeze one. I do put the red sauce in both containers and then I freeze the sauce before adding the shells. Going freezer to oven. The shells do not soak up the sauce.

I just found you and I realized the comments are 10 years old!! I hadn’t ever done this dish with anything but fettuccine— and I love shells, so I had to go for it. Your recipe was so easy, well written and best of all— it came out exactly as you said! I ended up not getting home with everything I needed, so I subbed a couple of things in the filling, and instead of doing a bechamel/ Alfredo homemade, I used a decent brand of simple tomato sauce under the shells. (I was a little worried!) But Surprise, surprise !! It was absolutely delicious. I was so glad!! Thank you for helping us have a super tasty dinner, even 10 years later!
