Happy New Year! We had a really nice Christmas and New Year. Very low key and spent it with my family. I wouldn’t have it any other way. Christmas Eve I prepped my Cinnamon Rolls and let them do their thing overnight. I have been making cinnamon rolls every Christmas morning since we got married. I actually did a little tweak to the recipe this year and they turned out perfect. I will need to re-vamp the recipe for all of you.

We spent the day in Christmas PJ’s, opening and playing with new gifts, watching Christmas movies, and eating Cheesy Stuffed Shells. I have also tweaked this recipe slightly this year and will need to update it as well. The only difference is I added cottage cheese to the filling to give it a creamier texture.
My little guy was at a fun age this year, so it made it very memorable. I loved that his pre-school made an ornament to give us to put on our tree. It probably was my favorite gift to open on Christmas Day.

Many of you requested for some one-sheet pan dinner ideas, so I thought this would be a perfect one to start the year with. I ended and started the year with a sinus infection / stomach bug. I didn’t have much energy to spend a lot of time on dinner, so this one-sheet pan dinner recipe was perfect.
Literally you throw all your ingredients on a sheet pan, which I got my half sheet pan from Sur La Table. I happened to have Shake and Bake seasoning in the pantry, so I tossed two pork chops in the seasoning. However, if you don’t have that on hand, you can literally just season with salt/pepper and any other of your favorite seasonings.
You can use any vegetables you have on hand. I had some little yellow potatoes, baby cauliflower, and cherry tomatoes. I tossed with a little olive oil and seasoned with salt/pepper. I also cut up a lemon and placed the slices over the cauliflower.
I had a little helper with me in the kitchen. I love that he is starting to get interested and wanting to help!
- 2 - 4 boneless pork chops (roughly 1 inch thickness)
- 2 cups, potatoes chopped (I used baby potatoes)
- 4 cups, vegetables such as broccoli, cauliflower, carrots, tomatoes, zucchini, squash
- 1 lemon, sliced
- salt / pepper
- Package of Shake and Bake seasoning
- Pre-heat oven to 350 degrees.
- Line half sheet pan with foil and drizzle with olive oil.
- Toss pork chops in Shake and Bake seasoning mix. Place seasoned pork chops in center of pan.
- Place potatoes and any veggies around the pork chops and drizzle with additional olive oil. Toss veggies/potatoes. Season with salt / pepper.
- Cut up lemon and place over over vegetables.
- Roast in oven for 30 minutes until pork chop is cooked thru and vegetables are roasted and potatoes are cooked thru. You may want to toss vegetables about halfway thru cooking time.
- After you pull tray out of oven, let the pork chops rest for at least 5 minutes before serving.
Not only is this an easy recipe to assemble on work nights, but clean up is a breeze too! Just roll up foil and toss.
