Day 13 – Christmas Cookie Style

#3 – Peanut Butter + Marshmallow Fluff, OMG DELISH!
You had me as soon as I heard those 3 things. These are so easy to make and so good. Especially if you are a fan of peanut butter/marshmallow fluff (fluffernutter) combination! This is a must try bar recipe to make this season!!
Last Year’s Recipe: M&M Chocolate Chip Bars. I have been making chocolate chip bars for a few years now, but last year I stepped it up a notch and added M&M’s to the top of the batter before popping in the oven! Who doesn’t love more chocolate?!? A good spin if you are a fan of chocolate chip cookies, but looking for a new way to make them vs. the traditional cookie form. - 16 oz. vanilla almond bark
- 1 (14 oz) can sweetened condensed milk
- 50 Ritz crackers (roughly 2 sleeves)
- 1½ cups creamy Peanut Butter (I used Jif Natural Creamy)
- 1 (7 oz) marshmallow fluff
- Line a 9 x 13 pan with parchment paper or foil. Lightly spray with non-stick spray and set aside.
- In a large saucepan, melt vanilla almond bark on low heat. Stir often. Stir in sweetened condensed milk and stir until smooth. Spread half of candy mixture on the bottom of prepared pan.
- Press crackers on top of almond bark so they are touching but not overlapping. Roughly 7 across by 4 down. Evenly spread peanut butter over crackers. (I used an offset spatula – this comes very handy!) Don’t worry about it being pretty on this step.
- Once peanut butter is spread, spread container of marshmallow fluff on top of that layer. Again, don’t worry about it being pretty. Top with remaining crackers touching each other but not overlapping. Pour remaining almond bark over the top of crackers. While almond bark is still warm – sprinkle with Christmas or any color sprinkles/jimmies.
- Cover and refrigerate until firm. Cut into bars and serve. Keep uneaten bars in the fridge.
