Day 4 – Christmas Cookie Style

Who doesn’t love a good Snickerdoodle cookie — or anything Cinnamon/Sugar combination. My husband is a huge fan of regular snickerdoodle cookies. So last year, I happen to make White Chocolate Chip Snickerdoodle Cookies. They were amazing. Soft, chewy and with the white chocolate chips, took it to a whole new level! This year, I knew I had to make something similar to a Snickerdoodle, but with a new spin. How about Snickerdoodle Bars? MMMmmmm….so good. Definitely a unique spin if you want the traditional Snickerdoodle cookie, but in a bar form. Highly recommend!

- 2 cups flour
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- 2 cups brown sugar, packed
- ⅔ cup butter
- 2 eggs
- 2 teaspoons vanilla
- ¼ cup sugar
- 2 teaspoons cinnamon
- 1 tablespoon butter, melted
- Pre-heat oven 350 degrees. Line a 9×9 baking dish with parchment paper or with foil. If using foil, lightly grease with non-stick spray.
- In a medium bowl, stir together flour, 2 teaspoons cinnamon, baking powder, and baking soda.
- In a medium saucepan, cook and stir brown sugar and ⅔ cup butter over medium heat until butter is melted and mixture is smooth. Remove from heat, cool slightly.
- In a separate bowl, beat 2 eggs and add vanilla. Slowly pour into brown sugar mixture – constantly stirring while pouring. Stir in flour mixture until combined.
- Pour batter into the prepared baking pan, spreading evenly. Bake for 25 to 30 minutes or until toothpick comes out clean. Cool slightly in pan on wire rack.
- In a small bowl, stir together remaining cinnamon and sugar. Brush warm bars with 1 tablespoon of melted butter and sprinkle with cinnamon-sugar; cool completely.
- Pull bars out of pan by lifting up edges of parchment paper / foil. Cut into bars.
